Belize is a country unlike any other in Central America. A diverse blend of black creoles and Maya mestizos with a large and semi-integrated German-speaking Mennonite population, the country’s mostly flat topography contrasts greatly with its neighbors Guatemala and Mexico. Our trip took my partner in crime and me through Belize City, Santa Elena, the Mayan ruins of Caracol, and the island of Caye Caulker just off the coast about 40 minutes via water taxi. We experienced off-roading through the jungle, swimming in the Caribbean, spelunking through the Rio Frio caves, biking around the island, and petting an assortment of friendly stray dogs.
